Ingredients
- 8 Chicken liver/hearts
- 2 tbsp Olive oil
- 2 tbsp Butter
- 1/2 cup Red onions, sliced thinly
- 1 tsp Fresh thyme, sliced finely
- 1/4 cup Brandy
- 10 oz bag Peaches, frozen
- to taste Salt and pepper

Directions
- 1. Soak chicken livers on buttermilk over night, drain and rinse with water and dry on a paper towel.
- 2. Season chicken livers/heart with salt and pepper.
- 3. Heat oil in sauté pan; sear the livers/hearts; remove and keep warm.
- 4. Add butter to sauté pan, sauté onions and thyme for 5 min, or to a golden brown, add brandy and flame, add peaches and cook for 5 minutes, add chicken livers/hearts; simmer for 2-3 minutes.
- 5. Arrange livers/hearts on a platter or plate, adjust sauce with salt and black pepper, spoon over livers/hearts.
- 6. Serve with rice or pasta or mashed beets-potatoes
